Tabouleh, Tabouli, Taboli...............

Regardless of how you spell it, or where you eat it, if your tabouleh is made using traditional ingredients, it's all good... literally.

Bulgur wheat, which is the basis of the western version commonly made in the U.S., contains zero cholesterol and has almost no saturated fat. Olive oil adds a little fat of the unsaturated variety and the experts on fat say it’s a better kind of fat than the saturated variety. Everything else in there -- the parsley, onions, mint, tomatoes and lemon juice are for all intents and purposes, fat free.

The great regulator If you make tabouleh a regular part of your diet, fiber supplements can become a thing of the past. The bulgur wheat used to make it comes from the whole grains of wheat cereal, with the grains steamed before they are cracked or sliced by a blade, this means that bulgur can easily be re-hydrated by soaking or boiling. Whole wheat, including bulgur can provide as much as 2.3 grams of fiber in every 100 grams of wheat. On top of that, the complex carbohydrates found in whole wheat are much better for you than the simple carbohydrates found in something like pasta.

The multivitamin that tastes good The bulgur used to make tabouleh is a lowsodium source of useful minerals. According to the USDA’s nutrition database, a one-cup serving of bulgur contains 18mg of calcium, 1.75mg of iron, 58mg of magnesium and 124 mg of potassium. Organs and muscle tissue in your body crave potassium and magnesium, which serve as electrolytes.

Since potassium is most common in meat protiens, tabouleh is also considered to be a great source of potassium for vegetarians.
